B & P

Over the last few days I’ve gotten some B & P ( baking &painting) done. For my painting I used the colors pink, red, and purple for my leaves. At first I wasn’t sure if it was going to look right but now that I’m all done with it, it reminds me of the Valentine’s heart candies!

For my baking that I was able to get done was cheesecake egg rolls. They were fun to make. However the egg roll part didn’t get over so well with the four older kids.

      ingredients for the sauce
      2 c. chopped strawberries
      2 tbsp. water
      2 tbsp. sugar
      for the egg rolls
      2 (8oz) bars of cream cheese – softened
      1/2 c. sugar
      1/2 cup sour cream
      1 tsp. pure vanilla extract
      pinch kosher salt
      12 egg roll wrapper
      vegetable oil
      powdered sugar for garnish

      step 1. in small sauce pan over medium heat, combine strawberries, water, and sugar. stir to combine and bring to a simmer.
      stir frequently and cook until thick and jammy 3 to 4 min transfer to a medium bowl and set aside.
      step 2. in large bowl combine cream cheese with sugar , sour cream, vanilla, and slat. using a hand mixer beat ingredients until fully combined.
      step 3. place an egg roll wrapper on a clean surface in a diamond shape and spoon approximately 3 tablespoons cream mixture into a line in the center . fold up bottom half and tightly fold in sides gently roll then seal fold with a couple drops of water.
      step 4. in large skillet over medium heat, heat oil ( it should reach 1″ up the side of the pan ) until it starts to bubble. add egg rolls and fry until golden, 1 min per side. transfer to a paper towel -lined plate to cool slightly
      step 5. plate, dust with powdered sugar, and serve with strawberry sauce
